Here is what you need:
- 4 kale leaves chopped and remove stems
- 1/4 diced cucumber
- 1/4 diced green pepper
- 1/2 cup of pomegranate seeds
- 1/2 avocado; diced
- 1/3 cup of sliced Parmesan cheese
- juice of 1/2 lemon
- 2 tablespoons olive oil
- 1/2 teaspoon honey
- 1/8 teaspoon Himalayan salt
- 1/8 teaspoon fresh ground pepper
First, in a large bowl combine kale, cucumber, pomegranate, avocado and Parmesan cheese; give it a good stir. Next, in another bowl combine lemon, oil, honey, salt and pepper and whisk briskly togehter. Finally, pour mixture over kale salad and ENJOY!
