Asparagus w/ hollandaise suace

~ Ingredients ~
  • 1 pound asparagus; trimmed 
  •  3 green onion; chopped
  • 1/2 fresh lemon
  • 1/4 cup of butter
  • 2 egg yolk; beaten
  •  salt and pepper to taste

First, cook asparagus, by place in a covered pot of salted water and bring to a boil.  Remove lid and cook for 5 additional minutes.  Drain your asparagus and beat your egg yolks and lemon juice with a whisk.  In a small pot heat butter, onion and season with salt and pepper.  Next, slowly add yolk mixture.  Once cooked for about 5 minutes it is ready to be serve over your asparagus.  Enjoy!
