I love cooking with fresh herbs especially in the spring and summer. This roasted dill sweet potato dish is perfect as a meal or a side dish rich with tons of flavor and healthy goodness. YUM!!!
Ingredients

1 tablespoon of olive oil

4-5 sweet potatoes (diced) skins included
·
1 tablespoon nutritional yeast
·
1 tablespoon of freshly diced dill
·
1 /4 teaspoon Himalayan sea salt
·
¼ teaspoons freshly ground black pepper
·
First, in a cast
iron skillet coat with olive oil, preheat oven to 400 degrees. After cleaning potatoes, dice them and place
in skillet. Season potatoes with sea
salt and pepper. Bake potatoes for 30 minutes
until crisp. Remove from oven and sprinkle
sweet potatoes with dill and nutritional yeast.
