I love roasting rooted vegetables and
they give me the comfort I need without traditional meat and potatoes. Roasted veggies at a high temperature give a
smoky, barbecue taste.
Here
is what you will need:
- 2 tablespoons of olive oil
- 2 -3 sliced sweet potato
- 1 russet potato sliced
- 2 carrots sliced
- 1 large red onion sliced
- 3 beets, peeled and sliced
- 1 cup of mushrooms
- Salt and pepper
- 3 cloves of garlic minced
- 1 teaspoon of dried parsley
- 1 teaspoon of onion powder
First, preheat
oven to 450 degrees. In a baking dish or
cast iron skillet place oil in skillet and coat. Next, add all rooted vegetables and
stir. Now sprinkle with spice and roast
for 25 minutes. Remove from oven and
serve.
