Slow Cooker Chicken Tacos

Slow Cooker aka Crock pots Meals are essential for busy nights and this Chicken Taco recipe was easy and a hit.

Ingredients
  • 1-2 pounds of skinless, boneless chicken
  • 4 garlic cloves; diced
  • 1 cup of your favorite salsa
  • 1 can of chipotle chile's 
  • 2 tablespoons of chili powder
  • 1 tablespoon of ground cumin
  • 1 teaspoon of salt
  • 1 teaspoon of black pepper
  • 1 teaspoon of ground paprika
  • 1 lime
  • Hard Corn taco shells
Toppings
  • Cilantro
  • Mexican blend cheese (optional)
  • Sour Cream (optional)
  • Diced Red Onion
First, in your slow cooker, place chicken, garlic, salsa, chiles and next 5 ingredients (spices)-cook on high for 4 hours or low for 8 hours.

Next, during last hour take chicken out of crock pot and place on cutting board and shred with 2 forks,  and place bake in slow cooker.  Take your Lime and cut in half and squeeze over the chicken.

Now, take shells and place on cookie sheet and bake at 350 degrees for 4 minutes.  Take shells and place chicken inside and desired toppings!
