One of this year's Resolutions is to
incorporate fish into our menu weekly but, the problem is only half of my
household enjoys it. It is my mission to make it tasty and "non
fishy" I created this oven baked tilapia and let me just say, it was
yummy!
Ingredients-
- 1/2 cup of cornmeal
- 1/4 cup of gluten free breadcrumbs
- 1/2 teaspoon Himalayan salt
- 1/2 black pepper
- 1/2 teaspoon paprika
- 1/2 cup of almond milk
- 1 pound of tilapia
- 1 tablespoon of fresh dill or 1/2 teaspoon dried dill
- 3 tablespoon of butter; sliced
- 1 lemon cut into wedges
- cooking spray
First, combine Cornmeal,
breadcrumbs, salt, pepper, paprika, and dill into a plate. Next, take
Fish and dip into milk and then cover with cornmeal mixture. Take cooking
spray and spray a baking dish, place fish in baking dish. Now take sliced
butter and place over fish, bake at 450 degrees and bake for 11 minutes. Your
fish should be flaky; serve with lemon wedges.
