Cast Iron Skillet Nacho Potatoes

I have been making homemade cast iron skillet Nacho Potatoes for as long as I can remember.  I love the taste of nacho but, without meat this is sure a treat. 

In a cast iron skillet add the following:
 Ingredients:
  • 3-4 chopped potatoes; cleaned and scrub
  • 2 tablespoons olive oil
  • 2 cloves of garlic; chopped
  • 1 cup of chopped red onion
  • 3 jalapenos; seeded and chopped
  • 1 cup of black beans
  • 1/ teaspoon Cayenne pepper
  • 1 teaspoon of chili powder
  • 1 teaspoon cumin
  • 1 teaspoon salt 1/2 teaspoon pepper

Stir everything together and place in a oven preheated to 375 degrees for 45 minutes,  Remove from oven and stir again and top with any or all of the following:
  • Black Olives
  • Cilantro
  • Sour Cream
  • Salsa
  • Shredded Mexican Cheese 
  • Green Onion
