A Perfect Sunday Roast | Crockpot New England Roast


Winter is here, and a good roast is perfect on any Sunday Evening meal.  This roast is a classic New England Roast but, I cook in the crock pot and it is ready just in time for dinner.

Ingredients
  • 4 pound pot roast
  • 1 tablespoon of salt
  • 1 teaspoon of pepper 
  • 1 teaspoon of onion powder
  • 1 teaspoon of garlic powder
  • 1 teaspoon of paprika
  • 1/2 cup of horseradish 
  • 1 cup of water
  • 8 small potatoes 
  • small onion 
  • 3 cloves of garlic
  • 3 celery stalks
  • 3 carrots
  • 1 tablespoon of coconut oil

First, take our roast and season with salt, pepper, onion powder, garlic powder and paprika.  In a cast iron skillet over medium heat; heat coconut oil and cook each side for the the roast for 3 minutes.   Next, take horseradish sauce and spread all over roast and place inside crock pot.  Chop onion, carrots, celery and garlic and place around the roast.  Add the water to the crock pot and cook on high or 4 hours or low for 6-8 hours.  Finally, once cooked place on platter and let rest for 10 minutes before cutting into and serving.
