Italian Buchetta | A Crowd Pleaser Appetizer!

Fresh Tomatoes and basil from the garden and your best olive oil make a yummy and simple appetizer for any crowd. 

1 1/2 cups of chopped tomato
1/4 teaspoon of sea salt
1 tablespoon of capers  
2 cloves of garlic crushed
1/4 teaspoon of fresh ground pepper
2 tablespoons of chopped basil 
2 tablespoon of olive oil 
1 baguette
1/4 cup of mozzarella cheese 

Preheat your oven to 400 degrees.

In a large bowl combine tomato, salt, pepper, basil, capers, garlic and 1 tablespoon of olive oil; and give a good stir. 

Next, slice baguette in half and then into slices.  On a baking sheet toast your baguette for 3 minutes on each side.

Now take the tomato mixture and spread on each baguette slice.  Drizzle each slice with the remaining olive oil and bake for an additional 5 minutes.   On the last minute sprinkle with mozzarella cheese, ENJOY
