Vegetarian Mushroom Stroganoff


Ingredients 
  • 1 cup of variety of your favorite mushrooms
  • 3 cloves of garlic; chopped
  • 1/2 cup of chopped onion
  • 1/2 cup of vegetable broth
  • 2 teaspoon paprika
  • 1 teaspoon oregano
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 tablespoon of sour cream
  • 1 teaspoon of olive oil
  • 2 tablespoon of fresh parsley; chopped
  • 1 cup of brown rice
In a large cast iron skillet warm oil then add mushrooms, garlic, onion; cook for 5 minutes.  Next, season with salt, pepper, paprika, basil and oregano; cook for additional 5 minutes.  Now add your sour cream and give it a good stir.  Top with parsley and add mushroom mixture to the top of rice.
