This stir fry is packed with tons of protein, and veggies and is very filling. Enjoy this meal as is or as a dinner side.
Ingredients:
- 1 cup of chopped firm tofu
- 1/2 cup of quinoa
- 1/2 cup of sliced cucumber
- 1/4 cup of sliced red onion
- 1 clove of garlic chopped
- 1/2 cup of chopped carrots
- 1/2 cup of sliced red and yellow peppers
- 1/2 cup shelled edamame
- 1 cup of spinach
- Salt and Pepper to taste
- 1 tablespoon of sesame seeds
- 1/4 cup of chopped cilantro
- 4 tablespoons of coconut amino's
- 1 lime
- 1 tablespoon sesame oil
First, cook quinoa according to the package directions. Next in a large skillet warm your sesame oil and add tofu, onion, garlic and carrots; cook for 5 minutes. Next, season with salt and pepper. Now add your peppers, edamame and coconut amino's; cook for 5 minutes. Add sesame seeds, and squeeze lime into skillet. Finally add cucumber, spinach, cilantro and quinoa and give a good stir.
