When buying cauliflower look for white flower clusters and a green jacket of leaves.
To prepare your cauliflower remove outer leavers and stalk. Wash cauliflower and separate each flower. Cook your cauliflower in salted boiling water for about 25 minutes. Drain your water and prepare the cheese sauce as followed.
In a pan melt 3 tablespoons of butter. Next, blend in 2 tablespoon of flour, 1 teaspoon of dry mustard, 1/4 salt and 1/8 pepper. Cook over medium heat until smooth. The sauce should be stir constantly so it does not burn. Now add 1 cup of milk and heat to a boil, stir consistently. Stir in 1 cup o shredded sharp cheese and 3 drops of red hot. Cook over medium heat until the cheese sauce is warm. Pour the sauce over the cauliflower and ENJOY!
