~ Grilled Italian Zucchini ~

This meal was super easy, crowd favorite and perfect any time of year.  

~Ingredients~
2-4 large zucchini's 
1/4 cup olive oil
1/4 cup balsamic vinegar
2 garlic cloves; finely chopped
Himalayan sea salt
fresh ground pepper
1/4 teaspoon ground basil
1/2 teaspoon onion powder 
1/2 cup ricotta cheese
1/2 cup shaved Parmesan cheese 
1/2 cup shredded mozzarella cheese
1/4 cup of gluten free bread crumbs
1 cup spaghetti sauce

First, heat grill; clean and slice your zucchini and place in a grill safe baking dish.  In a large bowl toss your zucchini, salt, pepper, oil, vinegar, garlic, basil and onion powder.  In another bowl mix the Parmesan cheese, mozzarella and ricotta cheese.  Now in your grill safe baking dish layer your zucchini, spaghetti sauce and cheese, repeat until the zucchini, and cheese is gone but, not the sauce.  Top the zucchini/cheese mixture with bread crumb and remained spaghetti sauce.  Cover your baking dish with foil and place your baking dish on grill and grill for 25 minutes.  Remove from grill and let sit for 5 minutes.
