~Cilantro Grilled Sweet Potatoes~



I love sweet potatoes anytime of year but, you need to be perfect about selecting a good sweet potato.  A sweet potato needs to be thick and dark orange.  Try to find a sweet potato with no bruising, cuts or scrapes.  Remember to store your sweet potatoes in a cool dark area with a temperature of 55 degrees for up to 4 weeks. 
 
~ Ingredients ~
3 large sweet potatoes; peeled and sliced 
5 tablespoons of olive oil; plus 3 tablespoons
Himalayan salt 
black pepper 
1/2 teaspoon of onion powder 
1/2 teaspoon of garlic powder
1/4 cup of cilantro
 1 tablespoon fresh lime juice
2 tablespoons of plain Greek yogurt


First, preheat your grill.  Next, in a large bowl mixed your sweet potatoes, olive oil, salt, pepper, onion and garlic powder until potatoes are coated nicely.  Now in a blender; blend cilantro, lime juice, 3 tablespoons of olive oil and  Greek yogurt.

Now lay sweet potatoes in one layer on grill and grill 5 minutes per side.  Remove from grill and drizzle the cilantro dressing on top!
