Gluten Free Oatmeal Raisin Cookies | A Family Favorite!


I love a sweet treat just like anyone but, not being able to eat gluten I miss cookies so I came up with a recipe to make a Gluten Free Oatmeal Raisin Cookie that everyone would love including my gluten eating family.

Ingredients
  • cooking spray 
  • 1 cup of Irish Butter; softened 
  • 1 cup organic sugar
  • 1 cup brown sugar
  • 2 large eggs
  • 1 tablespoon vanilla extract
  • 2 cups of Gluten Free Flour; I use Pamela's  
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon salt
  • 1 1/2 cup of gluten free quick cooking oats; I use the Trader Joe's Brand
  • 1/2 cup of raisins
  • 1/2 cup of chopped raw pecans
1st preheat your oven to 375 degrees, beat butter with a mixer till creamy and gradually add both sugars.  Now crack both eggs add to sugar mixture, add vanilla.  Gradually, add flour, baking soda, baking powder and salt; mix well!  With a large spatula add oats, raisins and pecans.  Take your baking sheets and spray lightly with cooking spray and spoon cooking dough onto the cookie sheets; bake for 9 minutes.  Remove cookies from cookie sheet and cool on a cooling rack.  Repeat until all the dough is gone.
