~Ingredients~
- 1 Small jalapeno pepper chopped
- 3 cloves of garlic finely chopped
- 2 medium zucchini chopped
- 1 small onion chopped
- 2 hard boiled eggs chopped
- 1 large dill pickle chopped
- 6-8 potatoes chopped; I love red skin
- 2 tablespoons raw honey
- 2 tablespoon of Dijon mustard
- 1 tablespoon mayonnaise
- 2 tablespoons of olive oil
- salt and pepper
- 1/2 teaspoon onion powder
- 1/2 teaspoon garlic powder
- 1 teaspoon parsley
In a large pot, add a pinch of salt and fill with water bring to a boil. Add your potato to the pot and cook for 8 minutes, add zucchini and cook for 2 minutes; drain the pot on a colander and rinse with cold water. Finally, add mayonnaise mixture to potato mixture and mix well! Refrigerate until ready to serve a minimum of 2 hours ENJOY!
