~ Ingredients ~
- 1-2 pounds of baby red potatoes
- 3 tablespoons of olive oil
- 2 cloves of garlic chopped
- sea salt and pepper
- 1 teaspoon for dried or fresh parsley
In a large pot fill with water and add about 1 teaspoon of sea salt and potatoes bring to a boil. Once boiling cook for 10 minutes and drain. Next, heat grill and in a sauce pan on the stove; add olive oil and garlic and cook over medium heat for 8-10 minutes. Now in a large bowl add potatoes and oil/garlic mixture: stir and toss. On grill place each potatoes on your top grilling rack and cook for 3 minutes and then flip and cook for 3 more minutes. Finally, season your potatoes with parley, salt and pepper and ENJOY!
