We love Panini’s and they make a
perfect meal during lunch or dinner. You
can get as creative as you want with your Panini maker and assembling
sandwiches. I create the South West Panini
incorporating the flavors of the south such as Texas.
Here
is what you will need:
- ¼ cup of olive oil for spread on each slice of bread
- 2 cups of chopped chicken breast
- 1 ½ teaspoon chili pepper
- 1/3 cup of dices jalapeno
- 1/3 cup of diced red onion
- Salt and pepper
- 3 tablespoons of mayo
- 1 teaspoon of lime juice
- Dices tomato, spinach for topping
- 4 slices of American cheese
First, preheat
Panini maker and brush one side of bread with olive oil. Next, mix chicken, chili powder, onion, jalapeno,
salt, pepper, mayo and lime juice and mix until well blended. Take one slice of bread and top with
Southwest Chicken mixture, tomato, spinach and cheese, now top with another
slice of bread. Repeat process with remaining bread.
Grill each
sandwich for 3 minutes until golden brown. Keep warm until ready to serve!
