
These bad boys are so good and a Family Favorite especially during Halloween and perfect for a Weeknight Dinner!
Ingredients:
- 3/4 white or yellow potatoes peeled and cut into pieces
- Salt and Pepper
- 2 large eggs
- 2 tablespoons of BBQ Sauce
- 2 Teaspoons of Worcestershire Sauce
- 1/2 cup of Stove Top Stuffing
- 2 cloves of garlic, finely chopped
- 1 medium carrot, grated
- 1/2 pound of beef
- 1/2 pound of pork
- 12 grape tomatoes
- 3/4 cup of sour cream
- 24 frozen Peas
Heat
oven to 375 degrees and line a 12 cup muffin tin with foil liners or
Halloween Silicone Liners. Cook potatoes in a pit until tender. Add a
dash of salt reduce heat and simmer about 15 minutes. Drain, return to
pot and add sour cream, salt and pepper. Transfer potatoes to a pastry
bag and fit with 1/2 inch ribbon tip.
Next,
in bowl combine egg, BBQ, Worcestershire, dash of salt and pepper,
finally stuffing, MIX! Next, add garlic, carrot, beef and pork, mix
well. Divide mixture in muffin liners, and push one tomato into center
of each loaf. Cook at 375 for 16-20 minutes.
Now, pipe the potatoes back and forth over the loaf’s to resemble a mummy’s wrapping and place two peas on each for eyes.
