Homemade Crispy Hashbrowns using a Cast Iron Skillet

When making these homemade hash brown in a cast iron skillet the key is to flipping only once.  I love making these hash browns for breakfast while camping and sneaking in a a great dinner side. 

Ingredients
  • 5-6 potatoes; scrubbed and diced
  • 1/2 cup of diced onion
  • 2 cloves of garlic; diced
  • 1/2 teaspoon of salt
  • 1/4 teaspoon of pepper
  • 2 tablespoons of Irish Butter
 First, in a large bowl toss diced potatoes in onion, garlic, salt and pepper.  Next warm your cast Iron and melt butter.  Add your potato mixture to skillet and cook until bottom is brown about 15 minutes.  Flip your potatoes and cook for another 15 minutes.  Enjoy with a breakfast meat, eggs and fruit.
