Easy Pleasy Oven Baked Potatoes

I love rustic cooking and my cast iron pans are the bomb.  These pans are the best investment I have ever made and they are perfect for absorbing iron into my food, especially because I am a vegetarian.

What you will need:
  • 3 large red skin potatoes, cut into chucks
  • 1/2 cups coconut oil 
  • 1 small onion diced
  • 2 cloves of garlic diced
  • Salt and pepper to taste

Add all the above ingredients into a cast iron pan, put on top of a fire or place into a preheated oven set at 350 degrees for 45 minutes.
